The Green Goodness of Maaji’s Chutney

Fresh Ingredients with Purpose

Some of the most powerful elements in Indian cooking aren’t the boldest or heaviest—they’re the freshest. A simple blend of organic garlic, ginger, cilantro, green chiles, and lemon creates a base that is as healing as it is flavorful. These five ingredients, used raw and blended into chutneys or stirred into finishing touches, bring not only aroma and brightness, but also time-honored wellness benefits.

Garlic is a powerhouse of immune support. With natural antibacterial and antiviral properties, it has been used for centuries to help fight infections, support cardiovascular health, and reduce inflammation. When used fresh, its benefits are even more potent, delivering both sharp flavor and healing compounds like allicin.

Ginger, known for its warming qualities, helps soothe the digestive tract, reduce nausea, and increase circulation. It’s an essential ingredient in Ayurvedic healing and adds depth and heat without overpowering the palate. It balances well with garlic to form a base that supports both flavor and gut health.

Cilantro brings a cooling element to the mix—full of antioxidants, vitamin K, and natural cleansing properties. Often used to help detoxify the body, it’s thought to aid in heavy metal removal and support healthy skin, digestion, and inflammation regulation.

Green chiles add not just spice, but a healthy dose of capsaicin, which stimulates metabolism and promotes endorphin release. These tiny peppers help boost circulation and clear the sinuses, making them especially beneficial during seasonal transitions or after a heavy meal.

And finally, lemon—bright, acidic, and refreshing. High in vitamin C and known to support digestion and detoxification, lemon helps balance the richness of other ingredients and brings the body into equilibrium. Its alkalizing effect makes it a staple in both cooking and natural medicine.

At Maaji’s Street Kitchen, these five ingredients come together in our house-made Green Chutney, served with many of our dishes. It’s more than just a condiment—it’s a vibrant expression of health, flavor, and tradition in every bite.
